Italian Ricotta Donuts

Sfingi, also known as Sicilian Sfinci or Zeppole, are fluffy ricotta donuts, fried until golden and rolled in sugar. Traditionally made for Italian holidays like San Giuseppe or Easter, they’re just as perfect for any day you want something sweet and special.

Ingredients

·       1 C whole milk ricotta

·       2 lge eggs

·       3 Tbs granulated sugar

·       1 tsp vanilla extract

·       ¾ C all purpose flour

·       1 ½ tsp baking powder

·       Pinch of salt

·       Vegetable oil for frying

·       Powdered sugar for dusting

Directions

1.    In medium bowl, whisk together first 4 ingredients until smooth

2.    In a separate bowl, mix next 3 ingredients

3.    Add dry mixture to ricotta mixture & stir until combined (don”t over mix)

4.    Using a cookie scoop or 2 spoons, drop into hot 350 degree oil (2” deep)

5.    Fry 2-3 min. each side until puffed and golden.

6.    Remove with slotted spoon and place on paper towels.

7.    Once slightly cooled, dust with powdered sugar
