Parmesan Brodo (Broth)

Ingredients:

·       1 lb Parmesan rinds

·       1 Large Carrot peeled and chopped

·       1 Large Celery Stalk chopped

·       1 Large Head of Unpeeled Garlic halved across the equator

·       1 Large Yellow Onion halved

·       4 sprigs (3”-4”) Fresh Oregano

·       2 sprigs(4”-6”) Fresh Thyme

·       1 lge Bay leaf

·       8 – 10 Cups Water

·       Salt to taste ½ way through simmering.

Directions:

·       To a lge sauce pan, combine all of the above ingredients. (except salt)

·       Bring to a simmer over medium heat.

·       Add salt to taste ½ way through simmering.

·       Simmer for 1 hr. & 15 minutes adjusting heat to maintain a slow simmer.

·       Stir occasionally to prevent sticking.

·       Turn heat off and allow broth to cool.

·       Once cooled, strain into jars or containers.

·       Refrigerate 2-3 days, or freeze until needed.
